PB&J Overnight Oats (not in a jar)

Breakfast.  The time when I have no time to think about much, especially without coffee in my system.  While packing lunches for the next day, this is quick to put together in order to have something yummy the next morning that does not come out of a box from the freezer.  Although this Betty will not condone that behavior.  Totally acceptable from time to time.

Betty Twist: Most fruit like bananas or fresh strawberries would make a welcome addition to this recipe.  Also vanilla, cinnamon or a pie spice would also jazz it up as well.  With any spice add a little at time and keep tasting until you find your happy level.

Recipe adapted from Skinnytaste Cookbook.

Recipe for the Oats:

1/2 cup of milk (skim, soy, or almond)

1/4 cup quick cooking oats (no instant ones please)

1/2 tbsp chia seeds

1 teaspoon of sugar

Recipe for topping:

1/4 cup of fruit (in this case seedless grapes)

1 tbsp of peanut butter

1 tbsp of reduced sugar jelly (all I had was Goobers so I ran with it)

Directions:

  1. Place all ingredients for the oats in a cup, bowl or jar.  Will look soupy until the oats have absorbed much of the liquid.
  2. Cover, let sit overnight.
  3. Next morning, add in the fruit, jelly, and peanut butter, stir, and enjoy!
