The pros: Stew Leonard’s Eggplant Parmesan Sub has lots of thinly sliced eggplant that is breaded and fried to perfection. Huge shreds of cheese here.
The cons: None come to mind
The verdict: For $7.99 you are paying pretty close to what you would in a pizzeria for a hero (or sub, hoagie, or whatever your local dialect deems a sandwich consisting of a roll). The eggplant was perfectly breaded, there wasn’t a ton of sauce to make it soggy, and there are huge shreds of cheese that melt perfectly in 10 minutes in a 350F degree oven. The cheese adds enough salt to this. This can feed two people when cut in half. The bread is likely made in house with the other bread products as was very fresh. You do have the option of picking up a sub that is already hot and waiting for you. If it can wait, then this is the one to grab before you check out. Tasty and I’d buy it again (or buy another variety and blog about it. You get the idea).

After being baked for 10 minutes you get:
Would I buy this again? Yes. This is on point with any other eggplant sub (hoagie, sandwich, hero whatever your preference) as any I’ve had. In 10 minutes it was warm and melty. It was more than I could eat in one sitting and I had half the next day for lunch.
